Reviving Leftover Grilled Chicken & Mashed Potatoes into Loaded Chicken Alfredo Gnocchi Bake

How about kicking it a few notch and combining a comfort dish that will surely make your dinner meal not only easy to make but packed with flavor?

Chicken Alfredo is one of the most amazing comfort dishes to date. But why not take it further by using gnocchi instead of fettuccine or any other pasta?

If you have mashed potatoes and grilled chicken from yesterday’s dinner lying around waiting to be used, then this dish is a perfect way to give your leftovers a new and tastier look

And to put it a step further, we’re going to add loads of melted cheese.

After all, chicken, gnocchi, and cheese equal full-fledged comfort food.

For the gnocchi, we’re using the homemade gnocchi recipe that we posted before at this link. We also used Priority Chef Potato Ricer and Masher to get the fluffiest and creamiest texture for our gnocchi.  Those fluffy little pillows will surely make your day!

Here goes the recipe for the Loaded Chicken Alfredo Gnocchi Bake

Ingredients

  • 3 cups gnocchi
  • 2 cups cubed cooked grilled chicken
  • 2 cups frozen broccoli
  • ½ cup cooked bacon, crumbled
  • 1 - 15-ounce jar Alfredo sauce (any brand will do)
  • 1 ½ cups shredded mozzarella cheese

Preheat your oven to reach 400 degrees F.

Add gnocchi, grilled chicken, broccoli, bacon and Alfredo sauce in one bowl and mix together. Spoon the mixture into casserole dish.

Top everything with mozzarella cheese to give it a yummy gooey cheesy texture. Who doesn’t love melted cheese?

Put in the oven for about 20 to 22 minutes. You will soon see the mixture bubbling up and then turn the oven to broil for about 2 to 3 minutes or until the cheese begins to brown. It’s important to keep your eye on it because cheese tends to brown quickly and there’s no turning back on brown and burnt cheese.

And voila, just like that you have an easy to prepare fancy and flavor-packed dinner that anyone can make. This dish can serve 6 to 8 people. Enjoy!
