Refreshing Pineapple Cucumber Salad

Summer seems to always make me crave for fresh and flavorful salads. And there’s nothing as refreshing as a Pineapple Cucumber Salad.

It is absolutely easy to make and it is quite delicious. It is great for this season of abundant fruits and vegetables. This refreshing Pineapple Cucumber salad is one of my favorites to make this summer. Basically, you can even use this recipe to make a pineapple salsa, just turn up the heat! I swear it will give your tastes buds something to drool over.

But if you want the same taste sans the heat, then it’s tame version is the best way to go. The combination of cucumber and pineapple will give you the most flavorful and refreshing salad that you ever tasted. It works well when you are having barbecue or chops.

I really love the way the dark green cucumber and greens contrasts and gives the yellow pineapple a pop of color. Really, the picture doesn’t even come close to giving this wonderful salad justice.

The sweetness of the pineapple is perfectly balanced by the crunchiness of the cucumber and the lime’s acidity. It is not only easy to make but you can even scale it for a small sit-down dinner or even feeding a huge crowd of guests. And surely, this is going to be an absolute hit!

Ingredients

1 ripe pineapple

1 English cucumber

2 limes

1/3 cup cilantro

Salt and pepper, to taste

Instructions

Take out your sharpest knife and remove the skin from the pineapple, after which make sure to remove the eyes. I use my trusty Priority Chef Knife for this. This makes sure that all the juice and pulp are not bruised, which will give me the most flavorful pineapple. Slice the pineapple into 1inch sizes and then proceed to chop your English cucumber the same size.

After this, bring out the cilantro and just roughly chop it and set it aside.

Now it is time to zest your limes. Set the zest aside and then juice them. I use my Priority Chef Lemon & Lime Juicer. This guarantees that I fully maximize each lime and get almost every drop of juice.

Now take out your salad bowl or a medium sized mixing bowl and combine all ingredients and just tossing slightly to evenly distribute the lime just and zest. If you want, you can add salt and pepper depending on your taste.
