On more than one occasion, we find ourselves having too much leftover mashed potatoes at hand. Regardless how efficient we prepare the menu, one this is for certain – you will have leftovers particularly the starchiest side of the menu, which is in this case: mashed potatoes.

So, if you find yourself with a surplus of mashed potatoes, you can use this recipe for Cheesy Leftover Mashed Potato Pancakes. Instead of just warming it up, why not give it a new life. After all, who doesn’t love anything hot, crispy and particularly tastes great with a zesty sour cream?

For the mashed potatoes, it is just pretty basic.

Just get some 5 pounds Yukon Gold potatoes that’s peeled, cut in half lengthwise. Add it up in a pot of boiled salted water, cook until tender but make sure that it’s still a bit firm.

Here’s the recipe for Cheesy Leftover Mashed Potato Pancakes:

  • 2 cups cold mashed potatoes
  • 1½ cups grated cheddar cheese
  • ½ cup grated pizza mozzarella
  • 1-2 large eggs
  • ¼ cup flour
  • 2 to 3 tablespoon of Crisco shortening or oil
  • Sour cream or applesauce and sliced green onions, for garnish (optional)

When it comes to the shortening or oil, the amount will actually vary on the kind of pan you use. If you want to get crispy pancakes, you may choose to use cast iron pan.

However, you need to use more oil compared to the non-stick pan.

On the side note, consider the consistency of your leftover mashed potatoes. If you feel that the pancake mixture is too wet, add 1 tablespoon of flour at a time until you get the consistency that you want. However, if the mixture is too dry and is falling apart, then add one more egg to the mix.
