Fun and Tasty No-bake M&M Peanut Butter Pretzel Granola Bars
I love granola bars, especially homemade ones. They are really easy to make and easy to grab when you are on-the-go. I particularly love the no-bake version which you can do with your kids as well. This granola recipe is perfect when you want to give your kids some kitchen project.
This granola bars only needs about 9 ingredients. Half of these acts like the glue that gives it form and holds it together while the other half gives it its sweet, salty and chewy taste. I love the combination of all the M&M, peanut butter and pretzels. It is too good that it can be hard to avoid eating the entire pan of granola bars.
After you tried this, you will never have the urge for that store-bought version.
Ingredients:
2 cups old-fashioned oats
1/2 cup pretzels, chopped
1 cup Rice Krispies
1/4 cup mini M&Ms, a couple more extra for sprinkling
1/4 cup butter
1/4 cup honey
1/4 cup peanut butter
1/4 cup dark brown sugar
1 teaspoon vanilla extract
Instruction:
Prepare your 8x8 inch and line it with a parchment paper and set this aside.
In a large mixing bowl, combine the oats, pretzels, mini M&Ms and Rice Krispies. I prefer to use Priority Chef mixing bowl for this one since later on once we combine the sticky stuff that you are going to need those extra grips at the bottom for some hold.
Add the butter, honey, peanut butter and brown sugar in a medium-sized sauce pan and place in medium-high heat. Bring it to a boil and then allow it to simmer for about 2 to 3 minutes. Make sure to stir it continuously to avoid it sticking at the bottom of the pan. Remove from the heat and add in the vanilla and stir.
Pour the mixture over the dry ingredient and stir together using a wooden spoon until everything is properly combined and all the bits and pieces are evenly coated.
Transfer the sticky granola mixture into the pan with the parchment paper. Press the mixture firmly and evenly. Make sure that everything is packed nice and tight. Sprinkle the extra M&Ms on top and press down lightly to make sure that it sticks.
Place the pan in the refrigerator to cool for 30 minutes before cutting and serving. You can store the rest in an airtight container inside the refrigerator.
